Selected works
A changing collection of plates shaped by texture, temperature and the character of ingredients at their best. The menu is a record of the kitchen's current point of view.
The collection
These selected works introduce the flavours and forms that guide the Brian G Vault table. Each dish starts with a central ingredient, then finds balance through acidity, texture and careful finishing.
The examples below describe a style rather than a fixed promise. The kitchen adjusts details as the season moves, keeping the menu responsive and considered.
On the plate
We return to familiar produce with close attention: a root is roasted until sweet, a leaf is used for its bitter edge, a sauce holds the dish together without obscuring it.
The result is food with contrast and clarity. It can be generous without becoming heavy, and detailed without asking for unnecessary explanation.

Ingredients remain recognisable, supported by measured seasoning and thoughtful contrast.
Plates adapt as produce arrives, reaches its best and gives way to something new.
Courses are arranged to create momentum, balance and an unhurried finish.
